Chili Mac
Well, y’all – the time has finally come – it’s cold outside! As lifelong southerners, the January chill always comes as a shock to our systems, and there’s nothing we’d rather do than stay inside, bundled in our coziest pjs and snacking on pie!
While we’re already getting excited for those long, warm summer days, there’s no reason we can’t take advantage of this season to slow down, stay in, and spend time with the ones we love. And that’s exactly what makes this delicious Chili Mac so special. This recipe is warm, flavorful, and packed with hearty protein, making it a favorite for kids, and a win for you.

Once it’s ready, your whole house will smell divine, and everyone can dig in!
We love serving this dish with sour cream, scallions, and grated cheese, but it’s great on its own as well.
Ingredients:
1 teaspoon olive oil
1 medium onion, chopped
3 pounds ground chuck
2 (8-ounce) cans tomato sauce
1 (6-ounce) can tomato paste
1 (14.5-ounce) can diced tomatoes
3 tablespoons Worcestershire sauce
3 tablespoons chili powder
1 tablespoon salt
1 tablespoon black pepper
1/2 tablespoon garlic powder
1 (14.5-ounce) cans red kidney beans, drained
2 (4-ounce) cans mushrooms, drained
1 (16-ounce) package elbow macaroni, cooked and drained
Sour cream, sliced scallions, and grated cheese, optional
Instructions:
Place the oil in a 6-quart Dutch oven and sauté the onion until softened. Add the meat and cook, breaking up with a spoon until no longer pink. Add tomato sauce, tomato paste, tomatoes, Worcestershire sauce, chili powder, salt, pepper, and garlic powder; stir to combine. Let simmer for 2 hours, stirring occasionally.
Stir in the beans, mushrooms, and pasta and continue to simmer for 15 more minutes. Serve with sour cream, scallions, and cheese if desired.
Serves: 6
