Berry Slab Pie

Berry Slab Pie is possibly our most requested former menu item at Southern Baked Pie! This delicious, rustic fruit slab pie features seasonal berries, a rich cream mixture, and our signature all-butter pie crust. It's just bursting with fresh-picked berry flavor, and it the slab base means it extremely easy to make - no crimping or pre-baking required.

Berry Slab Pie is also a guaranteed crowd-pleaser that will be right at home at both formal and casual occasions. 

1 SB pie dough 2 cups heavy whipping cream 8 oz cream cheese, softened 1 cup powdered sugar 1/4 cup apricot preserves 2 tbsp water 1 lemon 1 cup raspberries 1 cup blackberries 1 cup blueberries 2 peaches, thinly sliced 

Instructions:

1.) Make 1 recipe of pie SB Pie Dough (see bottom of page for recipe)

2.) Pre-heat oven to 375 degrees.

3.) Roll out dough to desired size and place on a parchment-covered pan. Prick the dough with a fork to prevent bubbling. Place in the freezer for 30 minutes before baking. This helps set the dough.

4.) Remove dough from freezer and bake for 27 - 35 minutes, or until golden brown. Let cool completely.

5.) While the dough is baking, pour heavy cream into a bowl and mix either by hand or with an electric mixer until soft peaks form. (2-3 minutes)

Chefs tip: If using a stand mixer, mix with the whisk attachment instead of the paddle attachment.

6.) Once heavy cream has been whipped, transfer to a separate bowl and set aside for later.

7.) In the mixing bowl, combine softened cream cheese and powdered sugar. Mix until combined. 

Chef's tip: Start your mixer slow to avoid a powdered sugar explosion!

8.) Once cream cheese mixture is combined, add whipped cream, 1 tbsp of lemon juice, and a little lemon zest. Lightly combine.

9.) In a pot, mix apricot preserves and 2 tbsp of water and heat on medium-low heat.

10.) Assemble your slab pie by spreading the cream mixture onto the pie crust and topping with thinly sliced peaches and berries. 

11.) Remove apricot mixture from heat and brush it lightly across the fruit.

12.) Garnish with fresh mint, and enjoy!

Southern Baked Pie Dough

Ingredients: 

8 tablespoons (1 stick) unsalted butter

1 ¼ cups all-purpose flour

½ teaspoon salt

½ teaspoon granulated sugar

¼ cup water

 

Instructions:

Makes dough for 1 single-crust 9-inch pie 

1.) Cut the butter into small cubes. Combine butter and flour in a mixing bowl. Using a pastry blender, work the butter into the flour. Add the salt and sugar. Continue to work the butter into the flour until the mixture has a consistency of coarse-ground cornmeal. The cubes of butter should now be smaller than the size of a green pea. 

2.) Add the water all at once. Continue to work the dough until the dough begins to come together. Form the dough into a ball, wrap with plastic wrap, and press into the shape of a disk. Place in the refrigerator for 2 hours to chill.

3.) Remove dough from refrigerator and roll out to desired size on a lightly floured surface.
